Lemon Raspberry Muffins

Raise your hand if you're a mama who appreciates the heart that goes into homemade goodies for Mother's Day! Pairing these muffins in a sweet gift basket will definitely get you bonus points next to a Young Living Lip Balm and Bath Bombs as a gift for your mom, bonus mom, grandma, or whoever has had a nurturing hand and warm hug for you in your life.

Whether it's for a Mother's Day treat or Saturday brunch, these scrumptious muffins are sure to please any pallet.

Ingredients

  • 2 1/4 c. all-purpose flour (or half whole wheat flour + half all-purpose)

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 3/4 c. sugar

  • 1/2 cup liquid coconut oil

  • 1 cup greek yogurt or sour cream (at room temp)

  • 2 large eggs (at room temp)

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice

  • 10 drops lemon vitality essential oil

  • 1 1/2 cups (12 oz) fresh or frozen raspberries


Directions

  • Place a rack near the center of the oven and preheat the oven to 375 degrees F. Spray a muffin pan with cooking spray and set aside.

  • In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk and set aside.

  • In a medium bowl, combine the sugar, oil, yogurt (or sour cream), eggs, vanilla extract, lemon juice, and lemon zest. Continue to whisk until the sugar dissolves. Pour the wet mixture into the dry mixture and fold until just combined. Do not over mix.

  • Fold in the raspberries.

  • Divide the muffin batter into the muffin pans and bake for 18 – 22 minutes or until a toothpick inserted into the muffin comes out clean with just a few crumbs. Let muffins cool in the pan for 10 minutes before removing to a cooling rack.

  • Save a couple for you and gift the rest!
