- 2 garlic cloves, minced 
- 1 Tbsp fresh ginger, grated (or 1 tsp powdered) 
- 1 tsp ground turmeric

- 3 cups low-sodium vegetable or chicken broth 
- 1 medium sweet potato, peeled & diced small (for quick cooking) 
- 1 large carrot, diced 
- ½ cup canned coconut milk (or any milk of choice) 
- 1 cup cooked chickpeas (or white beans for extra creaminess) 
- Juice of ½ lemon (or 1 Tbsp apple cider vinegar) 
- Salt and pepper, to taste 
- Optional toppings: drizzle of coconut milk, roasted pumpkin seeds, or chopped parsley 
Instructions
- Sauté aromatics: Heat oil in a large pot over medium heat. Add onion and cook 2–3 minutes, until translucent. Add garlic, ginger, turmeric, and cumin. Sauté for 30 seconds until fragrant. 
- Cook vegetables: Add sweet potato, carrot, and broth. Bring to a boil, then reduce heat and simmer 8–10 minutes, until vegetables are soft.
