Looking for a super simple and quick dinner for Valentine's Day? This is a recipe your taste buds will love - for Galentine's Day, a romantic set up for two, or for celebrating with the kids.
Servings: 4 | Cook Time: 30 minutes
INGREDIENTS
Kosher salt
1 lb. Einkorn pasta (or other pasta of choice)
1 tbsp. avocado or extra-virgin olive oil
1 lb. boneless, skinless chicken breasts
1 drop Black Pepper Vitality essential oil
2 tsp. Italian seasoning
2 tbsp. butter
1 small red onion, chopped
1 lb. asparagus, stalks trimmed and cut into bite-sized pieces
3/4 c. heavy cream
1/2 c. low-sodium chicken broth
Juice of 1 lemon
3 drops Lemon Vitality essential oil
3 cloves garlic, minced
3/4 c. shredded mozzarella
1/2 c. freshly grated Parmesan, plus more for garnish
1 lemon, sliced into half moons
Freshly chopped parsley, for garnish
DIRECTIONS
When you get home from the store or an hour before you start cooking, season both sides of the chicken with some salt and Italian seasoning.
In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
Grab your favorite skillet and heat avocado oil over medium heat, adding chicken and cooking on one side until golden, turning once. Remove from the pan when it's no longer pink. Transfer to a plate to let rest for 10 minutes, then thinly slice.
Cook Time: approx. 8 minutes per side, depending on thickness of breast.
Use the same skillet to melt the butter over medium heat. Add your red onion and asparagus and season with a little salt. Cook until tender then add heavy cream, chicken broth, lemon juice, and garlic and simmer. Stir in cheeses and let cook until gooey, then stir in lemon slices and pasta. Remove from heat and stir in Lemon and Black Pepper Vitality essential oils (start with recommended quantities and add more to taste).
Cook Time: 5 minutes to cook produce; 5 minutes of simmering.
Plate the pasta and top with sliced chicken, garnishing the pasta or plate with more Parmesan and a sprinkle of parsley. Add halved cherry tomatoes, spinach, peas, or other produce fresh from the Farmer's Market to add even more color, nutrition, and flavor to this recipe.
