This recipe is super simple and just smells and tastes like home! Einkorn flour is lower on the glycemic index than standard flours, so it's just plain better for ya. This recipe is a great way to introduce healthier alternatives in a “non-threatening” way to picky eaters. You can also totally swap out the Vitality oils in this recipe and try out different flavor combos (Ginger, Lemon, or Peppermint, just to name a few).
Ingredients
4 oz. (1 stick) butter (grass-fed recommended) at room temperature
1 cup brown sugar
1 tsp. sea salt
1 tsp. baking soda
3 drops Young Living Orange Vitality essential oil
1 drop Young Living Clove Vitality essential oil
1 drop Young Living Cinnamon Vitality essential oil
2/3 cup raisins, dried cranberries, chopped nuts, or chocolate chips.
2 cups quick oats
1 1/3 cup Gary’s True Grit™ Einkorn Flour
Instructions
Cream together: butter, sugar, salt, baking soda, and essential oils.
Add in egg, water, and vanilla; mix until emulsified.
Stir in the oats and your add-ins (I recommend the raisins) until mixed throughout.
Sift in the einkorn flour and...you guessed it...mix well.
Drop twelve 1” balls of dough onto an un-greased cookie tray.
Bake at 325°F for 13 minutes, one tray at a time, rotating the tray halfway through.
This recipe makes 36 of these delicious fall cookies. Try to allow them to cool before serving, as einkorn flour doesn't have the stickiness of the gluten in it like traditional baking flours; the cooler the cookie, the less it will crumble.
