Easy Weeknight Dinner

Chicken Asparagus Salad with Lemon Vinaigrette


Prep: 15 minutes

Total Time: 20-25 minutes

Serves: 4

Revised from a Good Housekeeping recipe.


Ingredients

  • 1 lb. fresh asparagus

  • Salt

  • 1 1/2 lb. boneless, skinless chicken breasts

  • Black Pepper Vitality Young Living Essential Oil

  • Lemon Vitality Young Living Essential Oil

  • 2 Tbsp. avocado oil (may sub for other cooking oil of choice)

  • 1 small lemon

  • 1 tsp. Dijon mustard

  • 1/4 cup pecorino or parmesan cheese, grated or thinly sliced

  • 5 oz. mixed greens

  • 1/4 cup roasted almonds, chopped


Instructions

Bring a pot of water to a boil as you trim and cute all but 4 spears of asparagus into 2 inch pieces. Add 1 tsp. salt to water + cut asparagus and cook for 2 minutes or until bright green. Once cooked, immediately blanch asparagus in a bowl of ice water. Drain + pat dry.


Pat chicken dry and cut into 1 inch pieces; season with lightly with salt (approximately 1/2 tsp.). In a large pan, heat 1 Tbsp. avocado oil on medium-high, adding chicken and turning occasionally until all sides are golden brown.


In a large glass, ceramic, or stainless steal bowl, juice the lemon and add in: 4 drops Lemon Vitality, 1 drop Black Pepper Vitality, 1 Tbsp. avocado oil, and 1 tsp. Dijon mustard; whisk together.


Use a vegetable peeler to create long strips from the reserved, uncooked asparagus. Add your peeled and cooked asparagus to the bowl of dressing and toss to coat fully. Fold in chicken and add to a bed of mixed greens, topping your salad with your chopped almonds and grated or sliced cheese.
